With Holidays upon us, I like most mums need to be pretty fast footed in the kitchen to provide the constant snacking demands. I wanted to share a few of our quick and easy favourites that allow me to spend less time in the kitchen and more time enjoying time off as a family.

Crispy Baked Kale Chips

1) 1 large bunch of Curly leaf Kale
2) 1 tbsp of Parmesan cheese. 2 if you like it cheesy
3) 1 tbsp Nutritional Yeast
Pre heat the oven at 150 degrees.
Wash and dry the Kale well, before tearing into pieces removing the stems and discarding these.
Drizzle with Olive all and mix throughly.
Spread the Kale evenly on a baking tray and sprinkle with Finely grated Parmesan.
Bake for about 5-10 minutes. Keep and eye on them as they can turn brown very quickly.This will make them bitter and rather unpleasant.  When they are crispy but still vibrantly green, they are ready.
Finish with Nutritional yeast.
Apple Donut rings with Sprinkles
Ingredients
Crispy sweet Apples
Organic peanut butter
Desiccated Coconut – Toasted
Dark Chocolate sprinkles
Good quality Granola – we used Stonelodge
Slice the apples and remove the core.
Cover in Organic Peanut Butter.
Sprinkle the Donuts with a topping of your choice.
We absolutely love toasted Desicated Coconut, Chocolate drops and Granola.
Chocolate coated Naartjies with Coconut Sprinkles.
Ingredients
1) Naartjies
2) 70 % dark chocolate
3) Desiccated Coconut
Peel the Naartjies and segment.
Place them in the fridge whilst you organise the toppings.
Melt dark chocolate in the Microwave 30 seconds at a time, stirring in between cycles until silky and smooth.
Dip the segments into the chocolate and sprinkle with Coconut whilst still soft.
Healthy Stuffed Avocados 
Ingredients
1) 1 Ripe Avocado
2) Canned Tuna
3) 1 Red Pepper finely diced.
4) 1 Handfull of flat leafed Parsley chopped
5) 2 tbsp of Pumpkin Seeds
6) 1 fresh lime
7) 2  tbsp of Mayonnaise (this is optional)
Halve the Avo and remove the Pip.
Scoop out most of the Avo and mash in a bowl with the remainder of the ingredients.
Place the stuffing back into the Avo, and it is ready to enjoy!
